  7. Apply 3% hydrogen peroxide. Leave 8–10 minutes. Blot. Sardine and herring myoglobin (0.3–0.8 mg/g — moderate, these are active schooling fish) typically requires 1–2 rounds of H2O2. Apply second round if any pink-red myoglobin tint remains.
  8. Apply white vinegar solution (1 part white vinegar, 4 parts cold water). Leave 8–10 minutes. The vinegar step addresses TMA from the dried fish TMAO and partially acidifies the biogenic amines (histamine, cadaverine, putrescine), reducing their odour intensity. Blot dry.
  9. Rinse thoroughly with cold water to complete salt removal. Blot dry. Allow to dry completely.
  10. Once fully dry: check for white crystalline residue (salt recrystallisation). If present, rinse with cold water and re-dry. When fully dry and no salt residue remains: apply baking soda generously and leave overnight (8–12 hours). Vacuum. This overnight baking soda step addresses residual biogenic amine and short-chain fatty acid volatiles producing the lingering tuyo odour.
