Vegetable Kare-Kare Carpet Stain: Peanut Sauce, Eggplant Anthocyanins, and Bagoong

When the baking soda paste (alkaline) is applied to a stain containing eggplant skin pigment, the anthocyanin may temporarily shift toward green-brown — this is a normal pH effect and not permanent damage. The subsequent H2O2 step oxidises the anthocyanin ring structure, reducing the colour. Rinsing with the final water step or the vinegar step (if bagoong was present) restores any pH-shifted pigment to a removable acidic form.

Banana Blossom Tannins

Puso ng saging (banana blossom / banana heart) contains polyphenolic tannins that oxidise rapidly after cutting — the familiar browning seen when a sliced banana blossom is left in air. When included in kare-kare and spilled on carpet, these tannins can leave a pale brown secondary stain if they oxidise before treatment begins. The enzyme step (which includes protease) does not address tannin oxidation products; the H2O2 step is the primary treatment. Tannin stains from banana blossom are typically light in colour and respond well to the first round of H2O2.

Treatment Sequence for Vegetable Kare-Kare

  1. Blot with cold water immediately. Cold water for kare-kare (not hot — heat sets annatto carotenoid into carpet fibre). Remove any visible vegetable pieces (eggplant, banana blossom, string beans) with a spoon.
  2. Apply baking soda paste (1.5 tablespoons baking soda + 1 teaspoon cold water). Vegetable kare-kare has high fat content from the peanut butter sauce (50–55% fat in the sauce), so an extended treatment is needed: 28–32 minutes. The baking soda works on both the peanut butter fat and partially saponifies any annatto that has co-dissolved with the fat.
  3. Rinse baking soda with cold water. Blot dry.
  4. Apply enzyme cleaner (protease for any vegetable protein, lipase for peanut butter fat penetration). Leave 20 minutes with damp cloth cover.
  5. Rinse enzyme cleaner with cold water. Blot dry.
  6. Apply 3% hydrogen peroxide. Leave 8–10 minutes. Blot. Check for residual orange-yellow annatto tint or purple-brown eggplant anthocyanin. A second H2O2 round is typically needed for eggplant skin or a rich annatto sauce. Apply second round, leave 8 minutes, blot.
  7. If bagoong was spilled alongside the kare-kare: apply white vinegar solution (1:4 ratio) after the H2O2 rounds. Leave 8 minutes to address shrimp TMAO/TMA from the bagoong. Blot dry. If no bagoong: this step is optional (peanut sauce and vegetables do not produce TMA).
  8. Rinse with cold water. Blot dry. Air-dry with ventilation.

Eggplant Colour Shift Under Baking Soda Is Temporary

If the stain area turns olive-green or brown when the baking soda paste is applied, this is the pH-sensitive eggplant anthocyanin shifting under alkaline conditions — not a new stain or a sign of carpet dye damage. The H2O2 step oxidises the anthocyanin ring and the final rinse restores the carpet to its original state. Do not add extra baking soda if you see this colour shift.

Bagoong Alongside Kare-Kare: When to Add the Vinegar Step

Kare-kare is traditionally served with bagoong alamang (fermented shrimp paste) on the side. Bagoong contains fermented shrimp with high salt content, high TMA concentration (from shrimp TMAO), and shrimp astaxanthin. If bagoong was spilled alongside the kare-kare (a common occurrence as both are on the same plate), the treatment must include the vinegar TMA neutralisation step. Bagoong also contains a small amount of astaxanthin from the shrimp shells — this may create a faint pink tint that responds to the H2O2 rounds. The combined kare-kare + bagoong spill is one of the more complex vegetable-dish stain scenarios, requiring the full sequence including the vinegar step.
